In the hot weather, we can also enjoy the delicious food---fried pork wonton, steamed instead of boiled. The steamed wonton is crystal clear, not easy to break, and has a stronger taste.

Wonton with Scallion Oil

1. The pork is chopped into minced meat.

2. Modulate minced meat. Add rice wine, ginger powder, light soy sauce, and old soy sauce, mix well, add water in portions and beat evenly, each time the water is completely absorbed, and then add another time until the meat filling absorbs enough water, stir in the same direction until the gelatinizes, add Mix salt, salad oil, sesame oil, and chopped green onion.

3. Wash the small greens and drain the water.

4. Bring water to a boil in the pot, add the vegetables to blanch, and the vegetables in the soup will become wilted.

5. Pick up the greens and immediately let the cold water cool down and squeeze out the water.

6. Chop the greens and add it to the meat filling, mix well to form the wonton filling.

7. Prepare wonton wrappers and appropriate amount of water.

8. Take a piece of wonton wrapper, spread water around the side as shown in the picture, and put an appropriate amount of wonton filling in the middle.

9. Fold it in half as shown in the figure, and pinch the three sides.

10. Fold in half again.

11. Spread water on the inner corners and squeeze it into a raw wonton embryo.

12. Do everything well.

13. Bring the water in the pot to a boil, put it in the steaming rack, place the wontons on the steaming rack for a certain distance, cover the pot, and turn to medium heat and steam for 5 minutes.

14. Put the chopped green onion in a bowl, heat the salad oil to 60% heat, pour in it, and pour it into green onion oil.

15. 1 tablespoon of light soy sauce, appropriate amount of chili oil, 1 tablespoon of sesame oil, 1 tablespoon of vinegar, and 1 tablespoon of sugar are made into a flavored juice.

16. Place the steamed wontons on a plate, cool slightly, add the sauce and scallion oil, mix well and serve.

Tips:

1. The preparation of pork filling adds seasoning according to your own taste.
2. Add water to the minced meat and whipped until it is strong, the taste is not dry, and the salad oil tastes more smooth and tender.
3. The wontons can be steamed. If the time is too long, the vegetables will turn yellow.
4. The sauce is adjusted according to personal taste.
5. Pinch the wonton and wipe it with water to make the bond stronger.
