Wuhan Sanxian Bean Curd

Soak the glutinous rice overnight, and steam it in a steamer for half an hour the next morning. After steaming, let it simmer for 10 minutes. Don’t panic removing the lid.

When steaming the glutinous rice, cut the diced pork, diced mustard tuber, diced bamboo shoots, and diced mushrooms. Marinate the diced pork with cornstarch and light soy sauce for ten minutes

Dried shiitake mushrooms for shiitake, soak in advance to soften

Pour oil in the wok, add diced meat, diced mushrooms, diced bamboo shoots, diced mustard, green onions, stir fry, add some hot water, soy sauce with cooking wine, oyster sauce, vinegar, salt and fry until fragrant. Serve on a plate and set aside

Adjust the batter, add all-purpose flour and warm water, keep stirring, and stir evenly without any small bumps

To fry the egg crust, pour the batter first, the batter is almost cooked, add an egg, spread well, turn it over and fry

After the egg crust is fried, spread the glutinous rice flat, add the fried diced pork, bamboo shoots, dried diced, and mustard tuber. After laying flat, pour a little oil and turn over.
