Yangzhou Egg Fried Rice

The shrimp is shelled, head, sand threaded, washed, and marinated with salt and cooking wine for 10 minutes. Soak the shiitake mushrooms until soft, wash and cut into cubes. Dice the ham.

Wash the peas and blanch them in boiling water.

Beat the eggs, add some cooking wine, stir-fry in the oil and serve

Heat oil in the pan, put down the diced mushrooms and stir fry

Put down the shrimp, minced ginger, add some cooking wine, salt, sugar, and stir until cooked.

The oil is hot in the pan, put down the rice and stir fry
7.
When the rice is fried, put down the ham
8.
Put down the peas and stir fry
9.
Add scrambled eggs, shiitake mushrooms and shrimps, stir and stir well
10.
Put some salt and pepper
11.
Add some chopped green onions and stir-fry well
