[yantai] Braised Beef Noodles

Prepare all the main ingredients. The beef and eggs are cooked in advance.

First make the noodles. Dissolve an appropriate amount of salt with clean water, slowly pour the salt water into the flour, and stir it into a flocculent shape. Press the noodle machine into noodles. If you don't have a noodle press, you have to roll the noodles manually.

Put a tablespoon of peanut oil in the pot, add star anise and bay leaves to fry until fragrant, then add ginger and chili.

Remove bay leaves and star anise, add diced onion and sauté.

Fry until the onion is transparent and fragrant, add a spoonful of soybean paste and sauté on low heat until the flavour of the sauce comes out.

Add beef cubes, add a little dark soy sauce to color, and stir fry over medium heat.

Add beef stock and appropriate amount of water, and add a teaspoon of June fresh soy sauce to taste. Add coriander before serving.

Boil a pot of boiling water, add the noodles after the water is boiled, and cook the noodles. Carrot slices are cooked in the noodle soup.

Scoop the cooked noodles into the bottom of the bowl, scoop into the beef broth, and place beef cubes, carrots and marinated eggs on top.

The chunks of meat are really satisfying.
Tips:
1. The noodles and noodles should be made slightly harder, so that it is easy to operate.
2. If the beef is not cooked in advance, raw beef can also be operated in the same way.
3. Mine didn't add too much chili for the children, only a little spicy taste, adding some oily chili would be more exciting.
4. Cooked beef is cold and cut until it is complete, and it is easy to shred if it is hot.
