Yellow Duck Called Stewed Tofu

The yellow duck is washed and water controlled, the tofu is cut into pieces, the green onion is cut into sections, and the ginger is sliced for later use.

Put an appropriate amount of vegetable oil in the wok, heat up to 70%, put the yellow duck in the wok, and fry on both sides for a minute or two.

Add water to the pot, cover the yellow duck, add green onion and ginger.

Add tofu, add appropriate amount of salt, turn on high heat, change to medium-low heat and cover and simmer for 30 minutes to make tofu into honeycomb shape.

Finally, sprinkle with chopped green onion, chicken essence, and pepper, and cook.
Tips:
1. The yellow duck call can be handled by the seller in advance, which saves the step of dissecting the fish by yourself;
2. Drain the fish in advance in order to reduce the water of the fish during the frying process and prevent the skin from being splashed and scalded by the oil everywhere;
3. Adding perilla can make the soup more fragrant.
