Pea jelly is a must-have snack on the table of Yunnan people. It can be eaten cold or deep-fried, with your favorite sauce. The pea flour I used comes from Yunnan, and I have also made it once.

Yunnan Crispy Pea Jelly

1. Put 250g of water in the pea flour and stir into a fine batter;

2. The batter is sieved to get a more delicate batter;

3. Put 250g of water and 2g of salt into the pot. When the fire is small, pour in the batter, stir while pouring, and stir until it is very viscous. This process takes more than 10 minutes;

4. Pour the batter into a heat-resistant container and let it cool completely;

5. The cold pea flour is poured out and cut into small pieces;

6. Put an appropriate amount of vegetable oil in the pan;

7. After the oil is hot, add peas powder and fry until golden brown;

8. Dip it in tomato sauce while it is hot. The skin is crispy and very delicious.

Tips:

Pea flour can be deep-fried, fried, dipped in hot sauce, or dipped in sweet sauce.
