Yuqian Rice Noodles

Ingredients: rice noodles, eggs, black garlic, elm money, onions.

Cut the onion into pieces. If there is no onion, you can also use green onions.

Boil water in a pot, put the rice noodles in the pot and cook for about 5 minutes. Cook them out and set aside.

Add edible oil to the pot, add Pixian bean paste, and stir fragrant after the sauce is in the pot.

Add the onion cubes, stir slowly to get the aroma, add the light soy sauce, and sauté until fragrant.

Add water and bring to a boil over high heat.

Add white pepper to increase the spicy taste, and add white vinegar to increase the sourness.

Put the rice noodles, and put the elm money in the last. When the elm money is mature, you can turn off the heat and put it in a bowl.

Tips:
Pixian Doubanjiang contains salt, so pay attention to the amount of salt in the production process. The black garlic should be simmered in the soup for a while to let its taste come out. There is no yuqian, you can use other vegetables instead. Pixian bean paste needs to be sautéed on a low heat to give it a fragrant flavor.
