Yuxiang Eggplant

Cut the salted fish into sections, wash, and soak in a bowl for half an hour.

Cut the eggplant into strips.

Cut green onion into sections, slice ginger and garlic.

Pour oil in the pot, heat the oil, add the onion, ginger, and garlic until fragrant.

Add salted fish and stir fry.

Stir-fry until it turns yellow.

Pour the eggplant strips. I think others fry the eggplant strips individually and then stir them together. I just pour it directly to save time and it tastes good.

Pour soy sauce and continue to stir fry.

Fry until the eggplant is soft, add 1 small bowl of water, half a spoon of salt, cover and simmer for 10 minutes.

Sprinkle with chopped green onion before serving.
