Amaranth Dumplings

Mix the flour with water to form a smooth dough for use, and wash the amaranth.

Boil the amaranth with water and squeeze it into small pieces. Mix the meat with chopped green onion, cooking wine, soy sauce, oyster sauce, salt, chicken essence, sugar, five-spice powder, and ginger powder. Add appropriate amount of water and stir in one direction. Mix with the ground amaranth, pour some hot oil and mix well.

Knead the dough into long strips, then cut them into even small doses, flatten them one by one, and roll them into a dumpling wrapper, and wrap the stuffing into a dumpling shape.

Pour the garlic, chili noodles, and white sesame seeds with hot oil, then add light soy sauce and balsamic vinegar, mix well and start eating.
Tips:
Red amaranth and green amaranth can be used for amaranth. The serving size will be reduced a lot after blanching, so prepare more amaranth and squeeze the water after blanching.
