Amaranth Salad

Wash the amaranth in water after removing impurities.

The washed amaranth is blanched in boiling water for one minute, and then rinsed with cold water for later use.

Chop the garlic into a puree, and chop the chili.

Put the minced garlic and chili in a small bowl, heat the wok with cooking oil and cook until 70% hot, then pour the hot oil into the bowl of garlic chili.
