Andong chicken is a common dish in Korea, slightly spicy. Personally, I can’t digest rice cakes, so I only put 3 or 5 sticks to taste. This dish is very generous. There are five people in our family. One chicken can eat two meals.

1. The chicken is about 2 catties. Wash the chicken, add cooking wine, salt, black pepper, and light soy sauce. Then gently massage them with your hands and leave them for at least half an hour.

2. While marinating the chicken, cut the carrots and potatoes into large pieces.

3. For the rice cakes, soak the potato flour in cold water to soften and set aside.

4. Put half a scallion, ginger, and garlic in the pot, add water to a boil, blanch the chicken, remove and set aside. The chicken broth is used to filter out impurities for later use.

5. Place the chicken, potatoes, carrots, and green peppers in the pot. I like to cook them in a casserole or pressure cooker.

6. Put in soy sauce, sugar, cooking wine, salt, add chicken broth and bring to a boil.

7. After the water boils, add the chopped dried peppers and onions, and turn to medium heat. After all the ingredients are cooked, add the remaining green onions, rice cake strips, and potato flour to continue simmering.

8. After the potato flour and rice cake strips are cooked, serve and sprinkle with cooked sesame seeds.

Tips:

When marinating chicken, many people like to marinate it with milk, which is very fragrant. You can leave the nian gao sticks if you don't like them, and the potatoes can be changed to pumpkin or sweet potatoes. Friends who like to eat shiitake mushrooms can also add shiitake mushrooms.
