Put the vermicelli in boiling water and boil until softened.

Add the sweet potato starch to the stock to make a juice (the water I added), not too much water

Cut the green onion ginger garlic into small pieces.

Take a pot, put the vermicelli, add the green onion, ginger, garlic, shrimp skin, salt, chicken essence, thirteen incense, and pepper powder.

Then add the appropriate amount of starch juice, sesame oil and shallot oil. (I didn’t use broth and meat oil, so I added some scallion oil.)

Mix directly by hand.

Stirred vermicelli, each stick is dipped in starch juice.

Take a flat plate and apply a layer of oil evenly

Spread the vermicelli evenly on the plate.

Dip starch juice with your hand to flatten the surface.

Put it in a boiling steamer for about 50 minutes.

The steamed skin scum is translucent, soft and elastic to the touch, smells strong and tangy, and has a smooth and chewy texture.
