Bacon Potato Cake

Cut the potatoes into large pieces and boil them in a pot until soft;

After the potatoes are cooked, take them out, peel them, and mash them with the back of a knife;

Put it in a bowl, add minced bacon, minced shallots, flour, salt, crushed black pepper and olive oil;

Mix evenly, take out a small piece, roll it into a ball and press it into a small cake;

Spread it flat on the bottom of the frying basket of the air fryer, preheat the fryer at 200 degrees, and set the time to 8 minutes;

Tips:
1. Cut the potatoes into large pieces, which can shorten the cooking time; when the potatoes are boiled until they are easily inserted with chopsticks, take them out, peel them, and mash them with the back of a knife;
2. Add chopped bacon and chopped shallots to the mashed potatoes, then add salt, chopped black pepper and olive oil to taste. Add 2-3 tablespoons of flour to the mashed potatoes to help the mashed potatoes form a dough;
3. Put the potato balls into small balls and press them into small cakes, put them in the air fryer, set for 8 minutes, then take out and brush the egg liquid and turn over; work for another 5 minutes to make the surface of the potato cakes golden.
