Baked Rice with Mushrooms and Olives

Prepare the materials.

Soak the shiitake mushrooms in advance.

The soaked shiitake mushrooms are washed and cut into small pieces; the onion is diced.

Cut olives and green onions into circles and mix well.

Dice tomatoes and dice shallots.

Add tomato sauce, salt, and a little pepper to the diced tomatoes, mix well, and add half a bowl of hot water.

Heat oil in a pan, pour in onions and fry them until they are fragrant.

Add shiitake mushrooms and stir-fry until soft.

After washing the rice, stir-fry for a while, add some salt and pepper to taste.

Use a pot that can be put in the oven or a baking tray, brush a layer of oil, and pour about 2/3 of the diced tomatoes and water.

Pour in half of the fried shiitake rice, spread olives and green onions.

Add the remaining half of the shiitake mushroom rice.

Pour in the remaining tomatoes and water.

Bake in the preheated oven at 200 degrees for about 40 minutes.
