Novices generally find it difficult to make bread. In fact, after making so many breads, they found that as long as the following points are done, the recipe basically doesn't matter.
The first is the ratio of liquid and powder, but this different flour, different seasons, the water absorption is different, so when you are making it yourself, you can’t follow the recipe completely, you should reserve 10 grams of water for example, and then In the process of kneading, judge whether to add more water according to the state of the dough. It doesn't matter whether it is kneading in a bread machine or by hand, it is the same. I use a bread machine to knead the dough. I often pause to look at it in the middle, or press the dough with my hands. If it feels too hard, it means you can add water; if it feels wet, don’t add flour easily. Knead it again. All right.
The second kneading should be sufficient so that the flour can fully absorb moisture. The general bread machine knead two procedures, basically can produce the film. I don’t think it’s necessary to reach in with my entire hand and knead out the so-called glove film. In fact, I cook and eat by myself. If I don't take the recipe, I will not pull the film for inspection. When pulling the film, don’t make it too heavy. You should remove a small piece of dough and gently pull it apart. The transparent film is the complete stage. If it breaks, it’s okay, as long as the broken place is a circular hole. , Toast only requires kneading to the complete stage, general bread kneading to the expansion stage is fine.
The third is fermentation. Bread is divided into three stages: first serving, middle loosening and second serving. The first serving is about an hour, and the middle is usually 15 minutes of relaxation. If the second serving is ordinary bread, about 40 minutes, the toast will be eight or nine minutes full. Once the hair is about twice as large, the fingers will be inserted into the hole to check, it will neither immediately retract nor collapse, that is, the hair will be completed; the slack in the middle is also very important, otherwise the dough will shrink during shaping, or the elasticity will not be good. Pull it off. I don’t need to reshape this one today, so I can omit this step; the second shot can be done in the oven, and a bowl of hot water is placed next to it to keep the humidity. After the second shot, don’t move the dough again, otherwise the baked shape will not look good. Yes, even brush the egg liquid gently.
The fourth is preservation. When it has not been completely cooled, seal it with a fresh-keeping bag and store it at room temperature. Generally, the taste can still be maintained for two or three days. Can not be stored in the refrigerator, it is easy to age, but it can be frozen.
