Beef Vermicelli

Make the filling: remove the vermicelli, soak in the water, and chop it up for later use. After the beef is chopped, add the vermicelli and mix well, then add salt + sugar + light soy sauce + soy sauce + cooking wine + sesame oil and mix well, then add the hydrated dry starch and mix well, and finally cover with plastic wrap and store in the refrigerator.

Proof: 200 grams of flour + 2 grams of yeast, mix well, add about 100ml of warm water and stir into a snowflake shape with chopsticks, then knead it into a smooth dough, cover it with plastic wrap for proofing. Before going to bed, take out the awakened dough and knead it by hand for a while and then cover it with plastic wrap and waft it overnight.

Flour cake: Get up in the morning and divide the dough into equal parts (I divided into 6 parts). Then sprinkle a little dry powder and roll it out with a rolling pin for later use.

Packing stuffing: After all, I am not a northerner, so I rolled the dough round and square, so I didn't make it according to the regulations. For the round ones, I use the technique of buns for bonding; for the square ones, I use the method of making a layer of meatloaf, just cover it and press the three sides together.

Frying: Heat a non-stick pan and add a little base oil, then put the prepared meatloaf in, fry until both sides are slightly charred, pour in a little boiling water, cover the lid and cook on high heat until the water dries and turn to medium-low heat and then add the meatloaf Fry until the color on both sides is satisfactory.
Tips:
1. The ingredients are prepared the day before. It is easy to fry 3-4 pancakes for 20 minutes in the morning, but if you need to do more, it will be a bit rush. Therefore, I also used the method of layered meatloaf to wrap the next few round noodles, which is much faster than buns;
2. When frying again, it is okay to not add water, but I think adding water can not only reduce the frying time but also ensure that the outer layer of the cake is not sticky. If you want to be crispy, you can turn it over more appropriately after the water dries.
