Beijing Lentil Noodles

Wash 1 catty of beans and set aside. Stewed noodles with kidney beans are better. Don’t buy the white ones that are not old. The lentils are more suitable for stewed meat, not for noodles

Cut the pork belly into thin slices, add cooking wine and salt, stir well and set aside

Appropriate amount of chopped green onion and ginger for later use

Cut garlic cloves into minced garlic, suitable for boiling

Sit in a hot pot, add a proper amount of oil, add the chopped green onion and ginger until fragrant

Add pork belly slices and some cooking wine and stir fry

After the meat slices change color, add the beans, put the dark soy sauce, light soy sauce, sugar, and salt

Add the boiled water covered with the beans, wait for it to boil, and use a small bowl to get some of the soup for later use

Spread the purchased noodles flat on the beans. Here is a little trick. The noodles should be laid flat before putting them in the pot, sprinkle with salad oil on top, and mix well with chopsticks, so that the noodles will not stick to the pot, and they will taste delicious and fragrant.

Braise the noodles over medium heat for 10-15 minutes. I spent 15 minutes this time, about three times, and sprinkled the soup on the noodles
