Braised Chicken Wings
1.
Wash chicken wings and marinate in cooking wine and salt for 30 minutes.
2.
Put rock sugar in a frying pan over medium-low heat and fry the sugar color until it is yellow, not dark brown. After frying, remove from heat and let cool.
3.
After cooling, pour in chicken wings (do not put chicken wings in while it is hot).
4.
Stir-fry over medium heat until the chicken wings are coated in color.
5.
Add green onion, ginger and spices and stir fry.
6.
Add soy sauce, rice wine, salt and stir well.
7.
Add water and spread over the chicken wings.
8.
Simmer on medium-low heat for 20 minutes.
9.
Turn up the heat and start collecting the juice.
10.
Don't collect it too dry, just thicken the soup.
Tips:
1. Chicken wings can be replaced with chicken legs and chicken wings roots.
2. Soy sauce, the color is between light soy sauce and dark soy sauce. In order to look good in color, don't have to be sooty. The dark soy sauce is too dark.
