Braised Eggplant

Wash the eggplant, remove the head and tail, and cut into sections.

Add salt and starch.

Mix well and let stand for a few minutes.

Wash the pot, add oil to heat, add eggplant cubes and cook until soft.

Pick up and let cool.

Add chili, bean paste and green onion, ginger, garlic to the oil in the pot and stir fry.
