Dry the water on the marinated fish.
4.
After the oil in the pan is heated, add yellow croaker and fry slowly.
5.
Fry until the bottom is golden brown, turn it over, fry both sides and serve.
6.
Mince the onion, ginger and garlic.
7.
In a separate pot, heat the oil and add the chopped green onion, ginger and garlic until fragrant.
8.
Add proper amount of boiling water, add sugar, salt, vinegar, dark soy sauce, cooking wine and bring to a boil.
9.
Put in the fish that has been fried in advance, and after the water is boiled again, use a spatula to pour the soup back and forth on the fish.
10.
Cover the pot, turn to low heat and cook until the soup thickens. (The fish needs to be turned over once in the middle)
Tips:
1. It is best to buy iced yellow croaker. The meat of frozen yellow croaker is not tender.
2. Before frying the fish, be sure to use kitchen paper to absorb the water on the fish, otherwise the oil will spray everywhere and you will burn yourself easily.
3. Fry slowly on low heat. Don't turn it in a hurry. Fry on one side until golden brown, then turn it over and fry the other side.
