Braised Noodles with Beans
1.
Knead flour, salt and water to form a dough. Add a little bit of water each time, otherwise the dough will be too soft and sticky, which will fail. The dough is as soft and hard as the dumpling skin. Knead it a few more times, wake up, and knead again until the surface is smooth
2.
Add dry flour and roll out
3.
Just roll it to the thickness in the picture
4.
Cut in the middle and divide into two
5.
Fold up both sides and cut the noodles thinly
6.
After the cut is done, sprinkle flour and shake well to prevent sticking
7.
Wash the prepared dishes and control water
8.
Cut off the beans, dice the meat, cut the spicy onion, ginger, and garlic for later use
9.
Heat the oil, add the meat and ginger, stir-fry until there is no moisture, add the pepper powder
10.
Add chili and beans in turn and stir fry
11.
When the beans are fried, add water. Water is very important. It should be just under the beans.
12.
Put the noodles in, spread them out evenly, don’t pile them together
13.
Cover the stew, and the water should be boiled when the bottom is under. Observe that there is no water around, turn off the heat and stew, do not uncover in the middle
14.
The minimum heat is about 13 minutes, and listen to whether there is water in the pot. At this time, the heat is normal and there is not much water. Take the lid and add the onion and garlic, shake the noodles and vegetables with chopsticks, and simmer for a few seconds.
15.
The braised noodles are done, you can ignore the first steps if you buy ready-made noodles
Tips:
The noodles are best and harder, strong, and non-sticky
