Braised Noodles with Beans

The best way to make braised noodles is fresh noodles.

Cut the pork belly into thin slices.

Wash and slice fresh shiitake mushrooms. Break the kidney beans into inch pieces.

Slice ginger and garlic, and cut dried chili into small pieces.

Put the pork belly in the pot, add a little water and cook it first. After the water is boiled, the oil will be slowly fried. Because less oil is not enough for the meat, you need to add some oil to fry the meat. Braised noodles require a little more oil, which is slightly more oil than normal stir-frying.

Fry the meat to your liking. If you like to fry the meat for a longer time, it will do just fine. Add ginger and garlic until fragrant.

Add the green beans and shiitake mushrooms and stir fry for a while, and fry until the color changes.

Add a bowl of water, a teaspoon of salt, and 2 tablespoons of light soy sauce. If you like a darker color, you can add half a tablespoon of dark soy sauce. I didn't add dark soy sauce, so the color is lighter. Mix well, cover the pot and simmer for two minutes on low heat to make it more delicious.

Use a rice bowl to fill two-thirds of the soup, then spread the vegetables flat, spread the noodles evenly on the vegetables, pour half of the soup first, and then cover the pot and simmer for five minutes. Note that the fire must be low.

Open the lid, pour the rest of the soup on the noodles, cover again, and simmer for 3-5 minutes, taking care not to boil off the water.

Finally, open the lid, add the dried chili, and stir the noodles and vegetables. If there is still soup, you can turn it on and let it dry.

In the end, the soup was almost collected and served on the plate.
Tips:
1. Braised noodles generally use beans, carrots, and bean sprouts. For this kind of dish that is resistant to cooking and not easy to simmer, you can add some fungi.
2. When seasoning and boiling the soup, cook a little more soup, first fill out two-thirds, and spread the vegetables and noodles as much as possible so that they can be cooked evenly. When the amount is large, add one or two more time for pouring the soup and simmering.
3. The noodles should be simmered on a low heat, if the heat is big, it will be easy to paste the pot.
