Braised Noodles with Beans and Eggplant

Wash the beans and cut into thin strips, not too thin, just half the thickness like chopsticks

Cut the meat into large slices and marinate in light soy sauce for 5 minutes

Stir-fry the meat first

Put the beans and eggplant strips and stir fry, and fry the beans until they become darker.

Add water, the water is one inch high, boil, simmer for 10 minutes

Put in the freshly sliced noodles and move them with chopsticks to avoid sticking. Cover, cook and simmer for another 10 minutes

Finally add chopped green onion and stir well.
Tips:
Shredded beans can be cooked quickly, so don't tear the eggplant strips too thick. Your fingers are about the same thickness.
