Braised Noodles with Beans and Pork Ribs
1.
Cut the ribs into pieces, wash the blood, drain, add salt, oyster sauce, light soy sauce, sugar, cooking wine, mix well and marinate for two hours
2.
Remove the two ends and old tendons of the kidney beans, break them into 4 cm long sections, wash and drain, shake the raw noodles and set aside
3.
Put oil in a hot pan, add garlic and marinated ribs, and fry until the color changes and the oil comes out
4.
Add the dark soy sauce, stir-fry and color
5.
Pour in an appropriate amount of hot water (the amount of water should be submerged over the ribs and the height is about 2 cm), cover, and cook for about 5 minutes
6.
Add string beans, add a little salt, and continue to cook for about 20 minutes
7.
Bring the water in the steamer to a boil, put in the raw noodles, and steam over high heat for about 10 minutes
8.
Take out the steamed noodles, pour in sesame oil, mix well, shake well, and let cool
9.
Scoop out the soup in the pot into a small bowl for later use, spread the steamed noodles in the pot, cover the pot, simmer for about 3 minutes on medium and low heat
10.
Then pour the soup that was scooped out in advance evenly on the noodles, cover the pot, and continue to simmer until the noodles are cooked through
11.
Sprinkle chopped green onion at the end and mix well with chopsticks.
