Braised Pork Noodles with Black Bean Miao

Ingredients are prepared. You need to use fresh noodles to make braised noodles. I made my own longxu noodles with a noodle machine. It is very thin and round noodles. The braised noodles are very good.

The black bean sprouts should be processed in advance, the pod skins inside are picked out, and the roots are cut off. Cut the tenderloin into shredded pork, not too thin, or it will shrink after being fried. Cut the leek into sections, mince the shallots, and mince the ginger.

Add a little water starch, salt and peanut oil to the shredded pork, and then marinate for a while, so that the shredded pork is very tender and will not grow old after being fried.

After the red dots in the wok are all the same color, add peanut oil, add the scallion, ginger, and shredded pork, and fry until the shredded pork turns white.

Add black bean sprouts, stir fry, add oyster sauce, dark soy sauce, salt and five-spice powder to taste.

You don’t need to fry them. After mixing them, arrange the ingredients and spread them out on the bottom of the pan. The soup should not exceed the ingredients.

Spread the noodles on top of the vegetables without covering the middle part so that the steam can turn up.

Cover the pot and simmer on low heat for about 8 minutes. During this time, you can open the lid and take a look. If the soup is gone, pour some water along the side of the pot instead of sprinkling it directly on the noodles. This new pot I entered has a well-balanced body temperature, making the noodles superb, and the final product does not have a trace of stickiness.

Sprinkle the leek segments and simmer for another half a minute, then open the lid, use chopsticks to scatter the noodles, mix them with the soup and vegetables, sprinkle with chopped green onions, and the delicious noodles are ready.
Tips:
1. Fresh noodles should be used to make braised noodles, fine noodles are the best.
2. Marinate the shredded pork in advance, the taste is super tender and smooth.
3. Don't overwhelm the vegetables in the soup, and overwhelm the noodles, otherwise it will become lumpy.
