Braised Pork Ribs with Bamboo Shoots

1. Fresh spring bamboo shoots, peeled and washed.

2. The ribs are chopped when they are bought at the vegetable market, soak them in cold water for at least half an hour, then squeeze out the water and drain them for later use.

3. Prepare green onions, ginger, garlic, and cut bamboo shoots into pieces with a hob.

4. Boil water in a pot, boil the water, blanch the cut spring bamboo shoots for two minutes, turn off the heat, strain it, and rinse with cold water.

5. Slice green onions, cut green onions into sections, and don’t cut garlic.

6. Heat the pan with cold oil, add the green onion, ginger, garlic, and pepper to the pot.

7. Stir fry the lower ribs and stir to boil.

8. After the water is steamed dry, add a proper amount of cooking wine, and then dry again, shovel the ribs aside, and add the homemade red-oiled watercress and Pixian watercress.

9. After sautéing the red oil, add appropriate amount of dark soy sauce and light soy sauce, stir-fry evenly.

11. Add blanched spring bamboo shoots, turn on high heat to collect the juice, and season for the second time.

12. Cut shallots into flowers.

13. When the juice is almost collected, you can turn off the heat, add the right amount of chicken essence and mix well, sprinkle the chopped green onion, and you're done.

Tips:

1. The vegetable oil in my house is refined and cooked vegetable oil.
2. Spare ribs can be replaced with chicken, duck, sirloin, etc. The time for various dishes is different, pay attention to adjustment.
3. If you like green peppercorns, you can add some green peppercorns when you add bamboo shoots. You can't make it early, and the taste is richer.
4. Pixian Douban recognizes Juancheng brand.
5. It is not recommended to blanch pork ribs and chicken, which will destroy the flavor of the finished product. Soaking for half an hour can remove most of the blood.
