Braised Pork Trotters with Dried Vegetables

Dry the vegetables to remove the salt on the surface, put them in a bowl, add water, and soak for 1 hour.

Put the peanuts in a bowl, add water, and soak for half an hour.

Add water to the pot, add the trotters, boil, skim off the foam, remove the trotters and put them in a bowl, set aside

Slice the ginger and sauté until fragrant.

Pour the trotters into the pot and stir fry a few times.

Add water, pour in the cooking wine and vinegar, cover the pot, bring to a boil, simmer on medium heat for half an hour.

Transfer the ingredients and soup to the rice cooker and add peanuts.

Tear the soaked and washed dried vegetables into small pieces, put them in the pot, add salt and light soy sauce to taste. Then add ginger slices. Cover the pot and simmer for another hour.

Tips:
1. Wash off the salt on the surface of dried vegetables before soaking them in water.
2. The pig's trotters are not so quickly simmered and cooked thoroughly, so I simmered them in a wok first and then simmered them with dried vegetables. Ensure that the trotters are well cooked and the dried vegetables will not be too bad.
