Braised Pork Trotters with Soy Sauce

Soak the cleaned trotters in bleeding water, and then blanch them in a pan under cold water.

Pour oil into the pan, add rock sugar, fry the sugar color, and then add the blanched trotters and fry until the trotters are colored.

After coloring the trotters, add bay leaves, star anise and cinnamon to fry them to create a fragrance. Add pepper, soy sauce, vinegar, and stir well. Add boiling water to soak all the ingredients.

Pour the trotters into the pressure cooker and press for 25 minutes.

After pressing it, pour it into the wok and add salt. Stir the fermented bean curd evenly. You can also add some spicy millet and stir-fry on high heat to collect the juice.
