Braised Sea Cucumber Trotter
1.
Wash the trotters, blanch them, and set aside.
2.
Pull the cylinder salt sea cucumber to clean and foam (see the method in the "Sea Cucumber Pig Tail Health Soup" published on this website http://i.meishi.cc/recipe.php?id=130468 for details). Because my husband doesn't like to eat sea cucumbers, I put 5 small sea cucumbers for one person.
3.
Wash scallions, ginger, garlic, onion, star anise, red dates, and wolfberry. Wash and set aside. (If you have tangerine peel, you can put some tangerine peel.
4.
Pour all the above-mentioned ingredients into a casserole, add boiling water, dark soy sauce, cooking wine, a little salt, and turn to medium heat. The whole process takes about 1 hour (for details, you can use chopsticks to see the maturity of the trotters).
5.
When the pig's feet are cooked to suit your taste and there is only a small amount of soup left in the pot, add rock sugar, turn the heat to a low heat to collect the juice for a few minutes, then turn off the heat for a few minutes and let it out. Sprinkle some green onions. (If you have white sesame seeds, you can sprinkle some white sesame seeds to increase fragrance)
Tips:
1. The casserole is the best choice. The meaty taste will be more elastic.
2. Sea cucumbers should not be eaten with vinegar or acidic fruits.
3. My cooking habit is not to put MSG, which is bad for the body.
