Braised Tofu

Cut tofu into large slices.

Boil water, add cooking wine, green onion roots and 2 grams of salt-boiled tofu, boil for 3 minutes and remove.

It is not hot to dry and cut into large slices for later use.

Cut the side dishes.

Beat the eggs, add 1 gram of salt and 1 gram of pepper, and beat well.

Heat the pot and add 20 ml of oil, and stir 2 star anise to fragrant.

Remove the star anise, wrap the tofu with egg mixture and fry until golden brown on both sides.

Serve the fried tofu on a plate.

Add 5 grams of oil to the pot, add the peppercorns and the remaining star anise to fragrant.

Remove the pepper and star anise, add the side dishes and stir fry until fragrant.

After sautéing, add the seasoning and the remaining salt and cooking wine, add 200 ml of water to a boil, and put the tofu into the pot.

The tofu is simmered until the soup is finished.

Sprinkle diced shallots on the dishes served on the plate.
Tips:
Tofu must be blanched to remove part of the purine and beany flavor. When frying, use low heat.
