Braised Whole Chicken

Prepare ingredients: one three-yellow chicken, a little green onion, ginger and garlic, dried chili, two star anise, two tablespoons each of light soy sauce, cooking wine, and oyster sauce, about 6 grams of salt, and two tablespoons of honey.

Clean the whole chicken, especially the internal organs twice. Put the whole chicken in a basin, pour in cooking wine, 5 grams of salt, and massage the whole chicken body with green onion and ginger for 10 minutes.

Cut the garlic into thin slices, cut the chili into small sections, and cut more onion and ginger.

Then adjust the sauce, about 1 gram of salt, soy sauce, light soy sauce, dark soy sauce, and oyster sauce. Two tablespoons each of honey, stir well.

Pour all the sauce on the chicken, add the garlic slices and chili together, and spread the chicken evenly. You can also use a toothpick to pierce the whole body of the chicken, so that it will taste faster.

Cover with plastic wrap and put it in the refrigerator to marinate for about 2-5 hours. If the chicken is large, it can take longer. The chicken I bought is relatively small, and it is very tasty after marinating for 2 hours.

Put onion and ginger slices on the rice cooker. If you like spicy flavor, you can add a little more dried chili. It's also very delicious.

Put the whole chicken in the rice cooker with the back of the chicken facing down, pour the marinated sauce into the pot, and add a small bowl of water. Cover the pot and choose the function of simmering rice, and simmer for about 30 minutes.

Turn it over at the last 10 minutes or so, let the back of the chicken face up, and continue to simmer for 10 minutes, so that the flavor is more even.
