Brine Chicken

Three yellow chickens are cleaned, salted, wrapped in plastic wrap, and placed in the refrigerator overnight

Take out the marinated chicken and rinse with water; peel the ginger and pat it flat with a knife

Boil the chicken in boiling water to filter out the foam

Add enough water to the pot, add all the seasonings, add the chicken after the water is boiled, the skin side of the chicken is over the bottom

Boil on high heat for 10 minutes, then change to low heat and cook for 40-60 minutes. Turn off the heat. Don’t take out the chicken first. After 10 minutes, take it out to dry, cut into pieces and put on a plate.
