Burnt Outside and Tender Inside-fried Small Fish

Wash the small fish, especially the black film in the stomach, be sure to wash it off.

Cut off the fish head and tail, and drain the water.

Add salt and cooking wine, mix well.

Add ginger slices and light soy sauce, stuff the ginger slices into the stomach to remove the fishy smell. Marinate for an hour.

Add starch and mix well.

Add some five-spice powder and mix well.

Put the lard in the pot and bring it to a low heat.
8.
Fry the small fish until golden brown.
9.
To make it more crispy, you can re-fry it once.
