The noodles are chewy and fragrant. You will know it once you cook it! My family has been doing this since I was a child. I have eaten it for decades. My mother used to make it, but now my mother is old, I just made it. It tastes better than my mother's! Henan's characteristic home-cooked meals are different from each other. I cook them for friends who don’t eat noodles in Guangdong, and my friends from Guangdong praised me as a must! good to eat!

If you haven't done it, you can WeChat (hongjunzhang) me! "

5. I forgot to take pictures in the following steps. Put the wok on the fire, pour in a little more oil. Too little oil is not good because the noodles are more oil-absorbing. When the oil is hot, add the green onion, ginger and chili, add the pork after a little taste. After a few times, add the dark soy sauce, salt and thirteen flavors. Stir fry until the meat is cooked. Add the right amount of boiling water (the amount of water will allow the noodles to absorb That’s enough, more than less is better.) Wait for the soup in the pot to boil, change to low heat and simmer for five minutes, turn off the heat!

6. This step is more critical! ! ! After the noodles are steamed, take them out of the pot with chopsticks, and place them on the cutting board to shake them loosely, loosely, and loosely. Tell the important things three times! If there is a part that is scorched by the pot and a part that is scorched, throw it away.

7. The key begins! Keep the cutting board next to the wok and the wok next to the steamer, so that the soup will not be easily spilled on the stove when you are working. The key begins! Hold the spatula in the left hand and the chopsticks in the right hand. Use both hands to clamp an appropriate amount of the shaken noodles and soak them in the broth of the wok. The noodles are all moistened. Do not soak for a long time. Use chopsticks in the broth. Let the noodles soak all the noodles out and put them into the steamer. They still need to be shaken loose in the steamer. Just put all the noodles in the steamer at a time, and put the vegetables and meat in the wok into the steamer together. If there is remaining soup in the wok, pour it on top of the steamer noodles!

8. Cover the lid and continue to steam for 10 minutes, counting the time with water! Do not wash the wok.

9. After steaming for 10 minutes, put it out of the pan and put it in the wok, mix the vegetable meat noodles, sprinkle in the coriander, and you're done!

10. It will be more flavorful with onion or garlic when you eat it! It depends on personal preference!

Tips:

The noodles must be shaken in or out of the pot. When soaking the noodles, it is advisable to completely soak the noodles. If the soaking time is short, the noodles will be steamed out and dry.
