This fast-handed western dish was made by a big chef when I was working in a Norwegian canteen many years ago. At that time, I felt a bit tired. The chef stirs the dug out zucchini flesh with eggs and cheese into the zucchini belly, and sprinkles it with extra cheese.
I improved it a little bit today by removing the cheese from the filling and adding some sweet beans, so that it tastes rich and sweet.

Ingredients: 1 zucchini (about 340 grams), 30-50 grams of cheese, 1 egg, 80 grams of sweet beans, 1 shallot, and 1 clove of garlic

1. Cut the zucchini in two and use a small spoon to dig out the middle flesh.

2. Cut the excavated flesh into coarse grains, put it in a cooking pot, and chop 1 shallot into chopped green onions, 1 clove of garlic, pat and chop, grab a handful of sweet beans, beat an egg, 1 gram of salt and a little bit of salt Stir all the peppers together.

3. Control the egg juice, put the remaining ingredients into the zucchini belly, put it in the oven at 200 degrees, and bake on the top and bottom for 5 minutes.

4. Put the controlled egg liquid into a microwave oven and beat for two minutes to solidify.

5. Take out the zucchini that has been roasted for 5 minutes and turn the oven to 250 degrees; then sprinkle the solidified eggs on top of the zucchini, and sprinkle some cheese (30-50 g) on top.

6. Put it in the oven and bake for another 5 minutes. The cheese on the surface is melted and lightly colored.

Tips:

1. One zucchini, half an egg is enough, but the other half of the egg is not good for other purposes, so there is an additional process of solidifying the egg juice.
2. In addition to sweet beans, the filling in the middle of zucchini can also be sweet corn kernels, chopped green and red peppers, shiitake mushrooms, fungus, minced meat, etc.
