Chicken Drumsticks with Scallions

Bring to a low heat until the water boils, chicken drumsticks, a green onion, ginger slices, wine, salt

After soaking the drumsticks for 5 minutes, scoop up the drumsticks and expose them to the air for about 3 minutes, repeat 3 times

Put the chicken drumsticks in the pot and cook on low heat for 20 minutes

Turn off the heat after 20 minutes

Open the lid and let the chicken legs soak in the soup until cool

Finely chop onion, shallots, and ginger

Saute the onions, shallots and ginger in a hot pot with camellia oil

Cut the chicken legs into pieces, pour ginger onions on the noodles, add some dipping sauce, and serve
Tips:
Stainless steel pots and bowls should not be washed with strong alkaline or strong oxidizing chemicals. Use some vinegar and water to soak, or use a soft cloth and detergent to clean it.
