Northeastern cuisine is rough and eclectic. There is no need to consider too many ingredients and techniques, most of which only need a pot of stew. Maybe this is as bold as the Northeast people's character.

Chicken Stewed with Mushrooms

1. Soak the mushrooms in warm water, filter out the impurities, set aside, wash the mushrooms, soak the powder with warm water; wash the chicken and chop into small pieces, cut the green onion into small pieces, and slice the ginger

2. Heat up a frying pan, add green onions and ginger, stir fry, pour in chicken pieces and stir fry until the color turns white

3. Stir fry

4. Drizzle with soy sauce, stir-fry, add mushrooms and water, and spread over the chicken nuggets

5. Add bay leaves, cinnamon, star anise

6. Bring to a boil, turn to low heat and simmer for 1 hour, then add mushrooms

7. Simmer the noodles for 30 minutes, season with salt, chicken powder, and pepper, and collect the sauce over high heat

Tips:

The water used to soak the mushrooms filters out impurities and simmers them together to give them a richer flavor.
