Yangzhou fried rice has attractive colors, rich and balanced nutrition, and delicious taste. My family likes it very much. Today I tried to use a casserole to fry, but I didn’t expect it to be a good fry. After the fry, I served it directly with the pot and rice, and it was still warm at the end.

Claypot Yangzhou Fried Rice

1. Shrimp shelled and prawn line, cut into small pieces, add some oil, salt and cornstarch, and marinate for 10 minutes

2. Cut carrots and cucumbers into small pieces

3. The corn kernels are broken, washed and set aside

4. Cut ham sausage into small pieces

5. Prepare the chopped green onion

6. Beat the eggs into a bowl and add a little salt to beat

7. Heat the casserole over high heat, pour in the right amount of cooking oil, pour in the egg liquid, and fry on low heat.

8. Add shrimp and stir fry

9. Stir-fry until the shrimps change color

10. Add oil to the casserole, add carrots and corn, and stir fry

11. Add cucumber and continue to stir fry

12. Add the ham and stir fry evenly

13. Pour the eggs and shrimp back into the pot, add salt and light soy sauce and mix well

14. Pour the rice and stir well

15. Sprinkle some green onion garnish, you can enjoy delicious Yangzhou fried rice

Tips:

Ordinary casserole soup may be broken. Don't use it for fried eggs and stir-fry. I use a casserole that does not break if it is dry or cold, so it’s no problem.
