Cod Ravioli
1.
Prepare the main ingredients.
2.
Let's make the stuffing first. Peel the cod fish from the skin and bone, cut the meat into the cooking machine, and add the onion, ginger and garlic to smash.
3.
Add some cornstarch and two quail eggs and continue beating.
4.
After whipping into fish puree, add salt and oyster sauce and stir until strong.
5.
Let's make noodles again. Mix the cob wheat flour, water, and two quail eggs for Arowana dumplings.
6.
Knead into dough.
7.
After squeezing the dough, put it in the noodle machine and press it several times in one gear.
8.
After the pressing is even, adjust to the fourth level and press again, and finally use the sixth level to press out the wonton wrappers, and cut them into large pieces with a knife.
9.
Wrap the wontons one by one.
10.
After the water in the pot is boiled, put the seaweed, add the wontons, cover the pot and cook for 3 minutes. After opening the lid, cook for 2 minutes until the wontons become larger and float.
11.
After removing it, add salt, dried shrimp skin, and sesame oil to a bowl to taste.
Tips:
1. If the fish meat is slippery and the blade cannot be hit, you can sprinkle some cornstarch on it to increase the friction and it will be easier to hit.
2. It can be operated after kneading the dough, no proofing is needed, and the proofing time is long, and the noodles are easy to become soft.
3. The amount of cornstarch does not need to be very precise. If the filling is thin, add some flour.
4. Unfinished wontons can be frozen and preserved.
