Cold Bean Sprouts Gluten

The gluten bought in the supermarket, cut into small pieces and wash it several times, put it in water, add a little alkaline noodles, and knead for about 1 minute. Then rinse with running water about 3 times.

Add water to a boil, add the gluten, and cook for about 1 minute.

Take it out, wash twice with cold boiled water, and squeeze out the water.

Blanch the washed soybean sprouts, then add the carrot shreds and cook.

The amount of seasoning depends on your taste.
When washing gluten, adding a little alkaline noodles will neutralize the sour taste of gluten.
