Cold Chicken Shreds
1.
Wash the chicken breast and put it in the pot, add cooking wine, ginger, boil, simmer for a while and simmer.
2.
The cooked chicken breast is put out of the pot and soaked in ice water for a while. If there is no ice water, replace it with cold water. Remove it and tear it into strips after cooling.
3.
Wash the cucumbers.
4.
Use a scraper to make thin slices.
5.
Cut short to a suitable length (cucumbers vary in thickness and length, please adjust the length according to the actual situation).
6.
Flip your hands horizontally and fold it into three pounds, as shown in the picture.
7.
Swing around the edge of the plate in turn.
8.
Repeat the operation, place the second layer, insert the first layer to code out the layer, as shown in the figure.
9.
Put the shredded chicken into the container, add salt, light soy sauce, oyster sauce, sugar, chopped garlic, green onion, sesame oil, and a little sesame oil.
10.
Place the mixed chicken shreds into a plate on the side of the plate, and pour homemade chili oil on top.
11.
You can also add some shredded carrots and onion shreds to the chicken shreds (the picture above was made the day before, and no vegetables were added. This was made today, with some shredded carrots). Which one is better?
Tips:
The chicken breast will be tough after a while in ice water. You can also boil it for the first time and pour it out. Then add cold water to the pot and cook it directly and then cool it with cold water. The toughness will also be very good. You can’t just cook it the first time, because it’s easy to boil, and the chicken is not tough and will not tear well, and it will not make it into strips.
