Cold Fungus

Wash the soaked fungus and tear off the small flowers.

Blanch the fungus for about two minutes.

Remove, cool the water, dry the water and set aside.

Wash the coriander and shallots separately and finely chop them, prepare the chili, garlic cloves, and peppercorns.

Mince the garlic, cut the chili into small circles, and remove the chili seeds.

Fill the pot with oil and put the peppercorns under the cooling oil.

After frying the peppercorns on a low heat, remove the peppercorns.

Continue to heat the oil in the pot until blue smoke appears.

Pour hot oil on the minced garlic and chili rings.

Add 2 tablespoons of light soy sauce, 1.5 tablespoons of vinegar, half a tablespoon of sugar, a little chicken powder and sesame oil.

Stir the sauce and pour it on the fungus.

Then add chopped coriander and chopped green onion, mix well, taste the taste, adjust appropriately if it is not suitable.

Tips:
The amount of mixed fungus is not much, I added 2 spoons of light soy sauce, I didn't add any salt.
