Cold Pork Head Meat

To prepare the cooked pork head, I bought the ready-made Sichuan lo-mei.

Cut into small pieces for later use.

Cut the shallots into chopped green onions and set aside.

2 garlic cloves, peeled, pat twice with the back of a knife, and add a pinch of salt.

Pound into garlic paste.

Add 3 tablespoons of purified water to make garlic water for later use.

Add a little bit of salt to the cut pork head, so it tastes salty, so be sure to put it sparingly.

3 tablespoons of balsamic vinegar.

2 tablespoons of light soy sauce.

Add the chopped green onion.

Pour the garlic water.

Add a spoonful of sesame oil.

Stir evenly and serve on a plate.
