Cold Potato Chips

Prepare all the ingredients.

Clean the potatoes, peel off the skin, and cut them into thin slices with a knife. Cut them to the same thickness as possible, so that the ripening time will be the same.

Rinse the cut potato chips to remove the starch on the surface, and then soak them in clean water for a few minutes.

The garlic is peeled and cut into minced garlic, the shallots are cleaned and cut into chopped green onions, the dried red pepper is cleaned, the stems and seeds are removed, and the red pepper rings are cut.

Heat the pan and add cooking oil. The amount of oil is slightly more than the usual amount of cooking. After the oil is hot, put the potato slices in a pan and fry.

Tips:
1. Potatoes taste better after being fried. If you are afraid of being unhealthy, you can switch to boiled, but the taste will be worse.
2. The seasoning sauce is 4 tablespoons of red oil, 3 tablespoons of light soy sauce, 2 tablespoons of balsamic vinegar, 1 tablespoon of oyster sauce, half a tablespoon of white sugar, according to the ratio of 4/3/2/1/0.5, which is very memorable. It is an ordinary stainless steel spoon used by my children for eating. If there are more ingredients, the amount will be increased. This seasoning sauce can be said to be an all-purpose cold sauce. It can also be mixed with kelp, eggplant, yuba, etc. The noodles mixed with vermicelli is also super delicious.
