Cold Tofu Shreds

Prepare the ingredients you need, and you can start making them. First cut the shredded tofu you bought into small pieces, the length of which you like. I cut about 5cm in length, and I feel that this length is the most suitable.

Now peel off the dry skin of the green onions, wash them, and cut them into small pieces of the same length as the tofu shreds. Then use a kitchen knife to cut them in half and cut them into thin shreds along the lines of the green onions. It's not very good, so try to cut it finely.

This cold dish, in addition to shredded green onion, coriander is also indispensable, otherwise the taste will not come out. Remove the yellow leaves from the 3 coriander roots, clean them, and cut them into shorter pieces than shredded tofu.

Put the shredded tofu, the chopped green onions, and the coriander into a large clean bowl.

Tofu shreds have no taste. They need the flavor of the seasoning to be delicious, refreshing and natural. So we need to make a delicious sauce for the shredded tofu, take a clean small bowl, add a little chicken essence, 2 tablespoons of warm water to the bowl, and stir until the chicken essence is melted. Then add 2 tablespoons of light soy sauce, 3 tablespoons of balsamic vinegar, half a tablespoon of sugar, half a teaspoon of edible salt, a little bit of sesame oil, and mix well. The chicken essence does not dissolve until about 40 degrees, so we need to melt the chicken essence with a little warm water.

Once the seasoning is done, it will be even simpler. Pour it directly on the shredded tofu, green onion and shredded coriander, stir evenly with chopsticks, and start eating.

If you like spicy food, you can add some chili oil on it to make it more fragrant.
