Wash the shallots and cut them well. Put the chopped shallots in the meat filling, beat in an egg, add ginger, a little sesame oil, salt, and thirteen flavors of chicken essence. Beat the filling clockwise with chopsticks or spoon until it is strong.

Take a piece of wonton wrapper and place it flat on the palm of your hand. Use chopsticks to pick up an appropriate amount of meat filling and place it in the center of the wonton wrapper.

Fold the wonton wrapper in half diagonally and pinch the corners tightly. Use your middle finger to hook the meat filling.
