Cowpea Braised Noodles

Add the flour and water, stir with chopsticks to form a flocculent.

Mix into a smooth dough, cover and let for 10 minutes.

Fat slices.

Remove the unused parts of the cowpea, squeeze into small pieces, wash and drain.

Mince garlic cloves.

Sprinkle flour on the panel, dip your hands with flour, take out the dough and knead repeatedly, and then roll it into a slightly thin round dough.

Spread dry flour evenly on both sides of the dough, and then roll it up from one end to the other.

Shred the rolled dough.

Sprinkle some dry flour and shake all the cut shreds into noodles.

Put the fat in the pan and stir-fry to get the oil out.

Add the cowpea and minced garlic and stir fry for 5 minutes until the cowpea changes color.

Add the dark soy sauce, salt, and pepper, stir well, add the water that has the cowpea in it, and bring to a boil over high heat.

Spread the noodles evenly, drip a few drops of sesame oil, cover the pot, turn to medium heat and simmer for 5 minutes, turn the noodles in the middle, and simmer until the water is dry.
14.
Finished product.
Tips:
The dough should be mixed and dry, otherwise it will stick together easily after cutting.
