Crispy Carrot Fan

First cut the white radish into sections and peel it. Because there is a gap between the skin and meat of white radish, it is easy to peel off after cutting into sections. I threw the peeled radish skins directly into the kimchi jar. Then cut into 4 equal pieces as shown in the picture.

Take one of them and cut off the small 90° corner as shown in the picture. This way the cross section of the radish is fan-shaped!

Put the side with the corner just cut off on the cutting board

Start cutting thin slices with a knife, but don't cut it off mainly, it feels like cutting a cucumber. If you feel that you can't grasp the depth, you can cut two chopsticks on both sides.

Cut about 5 slices and then you can cut it, and it will look like the picture.

Cut all the radishes and put them in a large bowl. Sprinkle some salt, not too much. Grab it evenly with your hands and leave it for 30 minutes.

After 30 minutes, the radish will still produce a lot of juice. Squeeze dry again, pour the juice into a bowl, add 4 spoons of light soy sauce, 1 spoon of oyster sauce, 1 spoon of vinegar, 1 spoon of sugar, and 2 spoons of cold water. 5 dried chilies, cut into sections, and add to the sauce.

Stir the sauce and pour it into the container containing the radishes. You can eat it after marinating for one night!
