Crispy Cucumber

Cut the cucumber into thin slices and marinate with a little sugar for about 15 minutes. (Don't have too much sugar, just a little bit)

After 15 minutes, a little water will seep out. Pour out the water. Then sprinkle in an appropriate amount of salt and marinate for half an hour. After half an hour, pour out the marinated water and squeeze the cucumber dry by hand. (The amount of salt is more than sugar, the purpose is to force out the moisture in the cucumber)

Prepare the side dishes when pickling the cucumbers. Cut pork into small cubes, scallion into small pieces, mince ginger, slice garlic, cut green and red pepper into circles, and prepare a little pepper.

Put an appropriate amount of bottom oil in the pot, add the diced pork and stir fry.

Add diced peppercorns and minced ginger, stir fry for a fragrance.

Add the green onion and garlic slices and stir fry.

Add green and red peppers, stir fry, turn to high heat.

Finally, add the pickled cucumber slices. Add a little oyster sauce and light soy sauce to taste. Try the saltiness and add salt as appropriate.

Slightly out of the pot.
