Crispy Egg Pie
1.
Material processing: add water and flour to form a uniform soft dough, cover with a damp cloth for 30 minutes, it will be softer, easy to handle, and taste good; shallots and chopped shallots; lettuce is washed and dried to control the moisture.
2.
Divide the good dough into 3 parts, which are roughly equal;
3.
Take a portion of the dough and roll it into a pancake (as much as you can roll it out as thinly as you can), spread a layer of peanut oil, and evenly sprinkle with salt and pepper powder;
4.
Fold up and down to the middle to make a three-fold, and then smear peanut oil on the surface;
5.
Close at both ends
6.
Fold the left and right to the middle again into three folds;
7.
Roll out the top, bottom, left, and right into a square; roll out as thin as possible, and use gentle force when rolling, and try not to break the dough;
8.
Put oil in the pan, heat the pan with cool oil and put the dough into the dough, fry on a low fire, turn it over after it is set;
9.
Fry until it is set on both sides and bulge in the middle;
10.
Tear open the crumb with long chopsticks, you can see that the crumbs of the crumb are parallel;
11.
Beat in an egg. If you can't knock the egg with one hand, you can beat the egg in a small bowl first (this step can be done in the pot, for the convenience of taking pictures, I took it out);
12.
Continue to fry on low heat until the eggs are cooked through, then they can be out of the pan;
13.
Spread a layer of bean paste, wrap the lettuce, and eat it.
Tips:
1. This method of making scallion pancakes can make the layers of the biscuits distinct, and the layers are parallel. It is easy to bulge in the middle during the pancake process, which is convenient for breaking the eggs and can keep the eggs intact.
2. As for what sauce to use and what vegetables to go with, it all depends on your preference. What sweet sauce, noodle sauce, hot sauce, tomato sauce, lettuce, cucumber, shallots, tomatoes... etc., please.
